Salmon Meatball Subs with Fresh Tartar Sauce

Ingredients
1 lb salmon fillets
1 cup panko breadcrumbs
1/4 cup Egg Beaters® Original
1 Tbs Holland House® White Cooking Wine
1 Tbs capers
2 Tbs fresh parsley, finely chopped
1/2 tsp seafood seasoning (like Old Bay)
1/2 tsp salt
1/2 tsp black pepper
1 pkg Brookshire’s Bakery Bolillo Rolls
leaf lettuce, for serving
Directions
  1. Preheat oven to 350° F. Using a food processor, chop the salmon into fine pieces. 
  2. Place in a bowl. Add breadcrumbs, egg, lemon juice, capers, parsley, seafood seasoning, salt and pepper.
  3. Form the mixture into 1 1/2-inch balls (12 total). 
  4. Place on a parchment-lined baking sheet. 
  5. Cook for 20 minutes. Place a couple of lettuce leaves into each of 4 buns. 
  6. Add 3 salmon balls to each bun. Top with tartar sauce.
